Adobo Chicken Fajita Pitas - 8 PP

One of my favorite things to do in the food blogging process is taking photos.  I love plating the food just so and turning the plate until I get a beautiful picture.  I guess the one exception is Adobo Chicken Fajita Pitas.  All I wanted to do was EAT my dinner!  My love of this dish overpowered my quest for the perfect picture.  What can I say? This is one of our favorites!  So very good!

We sometimes serve this on flour tortillas like traditional fajitas.  It depends on what we have on hand or what is on sale.  Personally, I find the pitas to be more filling.

I am providing the breakdown that I use to reach 8 PP.   If you have a lower point option for the cheese or pita/tortilla, you can easily make those adjustments.






Ingredients:
 
Put the first four in a gallon bag, squeeze until the chicken is covered & allow to marinate for an hour:
1 lb chicken breast cut into thin strips
1 tbsp cider vinegar
1 tbsp Wildtree Adobo Seasoning
1 teaspoon Wildtree Garlic Galore

1 tbsp grapeseed oil (garlic or natural)
2 bell peppers cut into strips (green, red, and/or yellow)
1 medium onion cut into strips
reduced fat cheddar cheese
shredded lettuce
diced tomatoes
pitas

1. Heat grapeseed oil in a non-stick skillet. 
2. Empty bag into skillet and cook until chicken is no longer pink. 
3. Add peppers and onions.
4. Continue cooking until peppers and onions are done to your liking. (I like them a little crisp)

5. Split pitas in half and fill with chicken, peppers, onions, cheese and toppings.

This is how I prepare mine and the point break down.
Pita - 4 pts
Chicken (2 oz) - 2 pts
Cheese (1 oz) - 1 pt
Grapeseed Oil for cooking - 1 pt
 Peppers, Onions, Lettuce, Tomatoes - 0 pts
