Island Chicken with Pineapple Mango Salsa - 5 PP

You might think that Wildtree's Hearty Oatmeal Mix-ins are one trick ponies.   Given their name I can understand why.  They are indeed fabulous mixed in with your morning oatmeal.  They are also delightful additions to all kinds of baked goods!

I'm not much of a baker and I love to use products in expected ways.  The minute I tasted the Wildtree Hearty Oatmeal Mix-in: Sugar & Spice,  I knew I was going to make a sweet and savory chicken marinade.  I also knew I wanted to pair it with a fruit salsa.

Typically, when I make a marinade the goal is to keep it zero points.  Add tons of flavor without adding any points to the meal.  This dish is an exception and I think it's worth it.  

Another great thing . . .one jar of Sugar & Spice will make this marinade many times and leave you plenty for your breakfast oatmeal or an Apple Pie Smoothie!!




 


Island Chicken

1lb boneless skinless chicken breasts
2 tbsp Wildtree Hearty Oatmeal Mix-in: Sugar and Spice
1 teaspoon Wildtree Hot Chili Pepper and Garlic Blend (or pinch cayenne or red pepper flakes)
1/2 teaspoon salt
1 clove garlic minced
1 tablespoon soy sauce
1 tablespoon cider vinegar
2 teaspoon grapeseed oil


Combine all ingredients in a ziploc bag and allow to marinate.
Grill until cooked thoroughly

Divide into 4 equal servings - approx 5 PP per servings


Pineapple Mango Salsa - 0 PP
1 Mango, diced
1 cup Pineaple, chopped (fresh or canned, packed in own juice)
1 jalapeno*
1/4 cup red onion minced
1/4 lime juice (or you can use Wildtree Mojito Mixer)
2 tablespoons cilantro
salt and pepper to taste

*Handle the jalapeno with care, do not get the oil on your hands!  Removing the seeds and ribs will cut back on the heat.   You can use as much or as little jalapeno as you like or eliminate it completely.


Combine all the ingredients.

I like to serve this with quinoa.  The chicken is slightly sweet with a hint of spice (not heat spice, but savory spice).  The salsa is sweet from the mango and pineapple but also spicy from the jalapeno.  The quinoa is nice neutral background for both of them!
