Spicy Carne Asada Chicken Pasta - 8 PP

I saw a spicy chicken pasta dish on a restaurant menu this past weekend.  It sounded amazing but it also carried a 39 PP price tag.  You read that correctly. 39 Points!!

This version is only 8 points for a 1 cup serving and can be made as spicy or mild as you like.  The cream cheese gives it a nice creamy texture without the fat of heavy cream or alfredo sauce.





Ingredients

combine in a ziploc bag to marinade
1 lb chicken breasts, boneless & skinless cut into strips or cubes
1 teaspoon Wildtree Spicy Carne Asada Seasoning
1/2 teaspoon Wildtree Rancher's Steak Rub
1 tablespoon cider vinegar

2 teaspoons grapeseed oil
1 cup chopped onion
1 cup chopped bell pepper - whatever color you prefer and sometimes I use extra to bulk it up!
8 oz uncooked Ronzoni or other fiber rich pasta
2 oz light cream cheese
1 can diced tomatoes, undrained
1 can black beans, drained and rinsed


Directions  
 1. Combine the chicken, Spicy Carne Asada, Rancher Steak Rub, and vinegar in a ziploc bag.  Allow to sit for an hour or longer.

2. In a large pot, cook the pasta according to package directions.


3. While pasta is cooking, add grapeseed oil to large (deep) skillet or pot and cook the chicken until no longer pink.

4. Add peppers and onion, cook until they begin to soften. 

5. Add diced tomatoes and black beans allow to heat through.

6. Next add the cream cheese and stir gently until it melts

7. I like to finish with 1/2 teaspoon of salt and an additional 1/2 teaspoon of Spicy Carne Asada Seasoning.  I recommend that you personalize this last step to taste.  It can really vary depending on how salty/spicy you like your food, how much you salt your pasta water, and if you tend to season your dishes while you cook.

8.  Fold the drained pasta into the sauce.

Makes about (6) - 1 cup servings. 

Optional toppings - French's Fried Onions and Grated Parmesan
