Coconut Chicken Salad - 5PP

If you asked me, I'd tell you I'm not a salad person.  I like a few pieces of lettuce covered with all of the things that make salads unhealthy and full of points.  This blog is starting to tell another story!  This will be my fourth salad recipe!

All of them are fairly simple and light and loaded with flavor.  This recipe is a fun and unexpected way to use the Hearty Oatmeal Mix-in.  I think the honey mustard paired beautifully with the coconut but I'll post the PP value separately so that you can easily make a substitution.




Ingredients

1lb chicken breast, skinless and boneless (cut into large strips or purchase chicken tenderloins)
1 cup unsweetened almond milk
juice from 1 lime
1 tablespoon hot sauce
1 teaspoon Wildtree Ranchers Steak Rub (or 1/2 teaspoon each, salt & pepper)

1/2 cup panko breadcrumbs
3 tablespoons Wildtree Hearty Oatmeal Mix-in: Coconut

Salad veggies (Lettuce, tomato, carrots, cucumbers)

 Honey Mustard Vinaigrette
1 tbsp honey
1 tbsp vinegar
1 tbsp dijon mustard  (more or less, depending on your taste)
1 tbsp grapeseed oil 
salt and pepper to taste

 
1. Combine the highlighted ingredients in a ziploc bag and allow to marinate (preferably overnight).

2. Preheat oven to 375 degrees.  Spray baking sheet.

3. In a shallow dish, combine panko and coconut mix-in 

4. Remove one piece of chicken at a time from the marinade and allow excess liquid to drip off.   Roll in panko mixture until covered pressing crumbs on if needed. Place on prepared baking sheet.  Continue until all chicken is breaded.

5. Bake 30 minutes, turning half way.

6.  While chicken is baking,  mix combine mustard, oil, vinegar, and honey.  Salt and pepper to taste.

7. Prepare your veggies, add warm chicken, drizzle the honey mustard over top, and enjoy!


Chicken Serving size - 1/4 of chicken = 5 PP

Dressing - 1 tbsp = 1 PP,  2 tbsp = 3 PP
