Greek Chicken Pita - 7 PP

Yesterday I prepped two bags of chicken.  One was used to make Broccoli Chicken Stir Fry.  I used the second bag to make Opa Greek Chicken.   You can find instructions on making the Opa! Greek Chicken here.  

Today, all I needed to do was mix the tzatziki sauce and chop some veggies.  Lunch tasted so fresh and delicious. 





Ingredients:
8 oz Opa! Greek Chicken cut into strips (cooked)
4 pitas
lettuce, shredded
red onion, sliced thinly
1/2 cucumber sliced thinly

Blend the following and refrigerate an hour before serving
1 tbsp Wildtree Tzatziki Blend
1/2 cucumber, grated
1 cup plain greek yogurt, fat free


The breakdown:
Pita = 4 PP
Chicken (2 oz) = 2 PP
Feta (2 tbsp) = 1 PP
Tzatziki Sauce = 0 PP
Lettuce, Onion, Cucumber = 0 PP
I hope this will make it easier for you to make substitutions!

To prepare one 7 PP Greek Chicken Pita, cut the pita in half.  Spoon 1 tbsp of prepared Tzatziki sauce into each half.  Layer the cucumber slices, lettuce, chicken, onion, and feta.
