Broccoli Chicken Stir Fry - 6 PP

Tonight, I prepped two meals at once.  It's amazing how similar they begin but how different they turn out.  Both begin with chicken breasts in gallon ziploc bags.  Both have the juice of half a lemon and a teaspoon of minced garlic.  Both have two teaspoons of a Wildtree blend.  After that, they couldn't be more different. I find preparing them together really simplifies dinner time! I'm excited to share both with you!

The first recipe is this Broccoli Chicken Stir Fry featuring Wildtree's hoisin sauce.   If you haven't tried hoisin sauce, it has a little kick to it!

I have found one of the keys to success with Weight Watchers is loading up on vegetables.  Stir fry is a great dish to do just that!

Again, I am not including a starch in this recipe.   I find it much more user friendly to be able to enter a serving of this recipe and a serving of my chosen starch.

 Ingredient List
1 pound chicken breast cut into strips or cubes
2 teaspoons Wildtree Lemon Pepper Blend
Juice of 1/2 a lemon
2 teaspoons minced garlic, divided
1 tbsp Wildtree Garlic Grapeseed Oil
1 pound broccoli crowns chopped into florets
1/2 cup Wildtree Hoisin Sauce

1. Place chicken breast, lemon pepper blend, 1 teaspoon garlic, and lemon juice in a gallon ziploc bag.  Squeeze until chicken is well coated.  Allow to sit for an hour.

2. Heat grapeseed oil in non-stick skillet.  Add chicken.

3. Cook chicken until no longer pink.  Add broccoli, hoisin sauce, and remainder of the chopped garlic.  Cover.

4. Cook on medium heat until broccoli is tender

5. Serve over your favorite rice

Serving size is 1/4 of the pan
