The marinated vegetables serve as a dressing on this salad. If you find yourself missing a traditional dressing, whip up some Wildtree Tzatziki dressing using fat free greek yogurt, lemon juice, and grated cucumber.
6 oz Opa! Greek Chickenchopped lettuce
feta cheese
1/4 cup diced red onion
1 cup grape tomatoes
1 green pepper
1 cucumber, peeled
8 Kalamata Olives
2 tsp Lemon juice
2 tsp Vinegar
2 tsp Grapeseed Oil
1 tsp Wildtree Tzatziki Blend
Dice the onion, cucumbers, and green peppers.
Cut the olives and tomatoes in half.
Mix the veggies and olives in a bowl with lemon juice, grapeseed oil, vinegar, and tzatziki seasoning blend.
Allow the veggies to marinade for an hour or so.
Spoon about half the vegetables over a plate of lettuce. Sprinkle with two tablespoons of feta cheese.
Top with warm sliced Opa! Greek Chicken.
