Meatloaf Stuffed Peppers - 6 PP

Here's another easy stuffed pepper recipe.  I didn't include a starch so that you can choose your favorite. The point value shown is only for the stuffed pepper.

This makes 8 peppers which can be too much if your only feeding a few people.  You can half the recipe or freeze some.



Ingredients
1 package Wildtree Just Like Mom's Meatloaf Mix
2 lb extra lean ground beef (95/5)
1/4 cup 1% low fat milk
1/4 cup low sodium soy sauce
1/2 cup ketchup

8 Bell Peppers
16 oz tomato sauce
1/2 cup parmesan cheese

1. Preheat the oven to 350

2. Cut tops off peppers and remove seeds. In a large kettle, cook peppers in salted boiling water for 3 minutes. Drain and immediately place in ice water; invert onto paper towels. 

3. Combine the meatloaf mix, ground beef, eggs, soy sauce, milk, and ketchup.

4. Divide the mixture evenly among the peppers.  The peppers may not be full depending on the size of your peppers.

5. Pour tomato sauce over the filled peppers.

6. Cover and bake for 55-60 minutes or until the beef is no longer pink. Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted. 

Serving size is 1 Pepper
