Everything Egg and Vegetables - 5 PP

Breakfast is one of the most important meals of the day.  With a little prep work and a little cook time, you can start your day off right and make a major dent in your vegetable requirements for the day with this delicious meal!


What you need:


  • 3 mini peppers, cut in strips (to keep it colorful try one red, one yellow, one orange)
  • 1/2 cup zucchini, cut in strips
  • 1/4 cup onion, cut in strips
  • 1 cup kale, chopped fine, stems removed
  • 1 tsp Smoky Bacon Grapeseed Oil, divided
  • 1 tsp Everything Spice Blend + 1/4  tsp
  • 1 large egg

How to prepare:

  1. Preheat a 10 inch skillet over medium-low to medium heat with 1/2 tsp of Smoky Bacon Grapeseed Oil.  When heated, add all the vegetables.  Cook the vegetables while stirring until the onions are nearly opaque and add 1 tsp. of the Everything Spice Blend.  You may continue cooking the vegetables until they are as soft as you prefer.  I like mine with a little crunch so I begin cooking my egg at this point.
  2. Heat up your small egg skillet with the reserved 1/2 tsp of Smokey Bacon Grapeseed oil.  Add egg.  Add 1/4 tsp of Everything Spice.  Cook egg to your preference.  As shown, Over-medium.
  3. Remove vegetables from skillet and place egg on top!  Serve immediately.
