Blueberry Walnut Chicken Salad - 10 PP

I found this recipe on the Wildtree site and made a few adjustments to make it a little more WW friendly.  Having never made this salad before, I have to tell you I really over-dressed it (see the photo)!  I was enchanted with how pretty the deep purple dressing look drizzled over crisp greens that I didn't stop myself in time. A little of this sweet dressing goes a long way.  You may even want to dip your fork instead of pouring it over the salad.



Ingredients
Chicken
¼ cup grated parmesan
¾ cup panko breadcrumbs
2 teaspoons Wildtree Lemon Pepper Blend
1 egg
1 pound chicken breasts, boneless & skinless

Salad & Garnish
4 cups lettuce
½ cup fresh blueberries
½ cup walnuts 


Blueberry Dressing
¼ cup Wildtree Wildly Blueberry Jam
1 tablespoon balsamic vinegar
cracked pepper to taste


1. Preheat oven to 400°F. 

2. Cut chicken into strips.

3. Combine the parmesan, breadcrumbs, and Lemon Pepper Blend. In a second bowl beat the egg. Dip the chicken strips into the egg, and then the breadcrumb mixture.

4. Place chicken strips on a greased baking sheet and bake for 20-25 minutes, or until chicken is cooked through. 

5. In a small bowl, mix together the blueberry jam, vinegar, and pepper. 

6. Divide the salad, blueberries, walnuts, chicken, and dressing evenly between four plates.

Note : Dressing should make approx (4) -  1 1/4 tbsp servings.
